For the Casserole
  • 12 cups Challah Bread or brioche
  • 2 cups Milk whole or almond milk
  • 4 large Eggs
  • 1 cup Brown Sugar or coconut sugar
  • 1 teaspoon Cinnamon or nutmeg
  • 1 pinch Salt
  • 4 medium Apples Granny Smith or Honeycrisp
For the Caramel Sauce
  • 1 cup Granulated Sugar or brown sugar
  • ½ cup Butter or vegan butter
  • ½ cup Heavy Cream or coconut cream
  • 1 teaspoon Vanilla Extract or fresh vanilla beans
Optional Toppings
  • ½ cup Chopped Nuts Pecans or walnuts
  • 1 cup Whipped Cream or coconut whipped cream
  • ¼ cup Maple Syrup preferably pure

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Chop challah or brioche bread into 1-inch cubes and place them in the greased baking dish.
  3. Whisk together 4 eggs, 2 cups of milk, 1 cup of brown sugar, 1 teaspoon of cinnamon, and a pinch of salt in a large bowl. Pour over the bread cubes.
  4. Core, peel, and slice apples, distributing them over the bread and pressing lightly.
  5. In a medium saucepan, combine 1 cup of granulated sugar and ½ cup of butter. Stir over medium heat until melted, then carefully add ½ cup of heavy cream.
  6. Pour the caramel sauce over the casserole evenly.
  7. Cover with foil and bake for 30 minutes. Then remove the foil and bake for an additional 20-25 minutes until golden brown.
  8. Let cool for 10 minutes before serving. Top with optional toppings like nuts, whipped cream, or maple syrup.
