For the Casserole
  • 24 ounces Mrs. T’s Cheddar Pierogies
  • 3 cups Chicken Broth Substitute with vegetable broth for vegetarian option.
  • 8 ounces Cream Cheese Light cream cheese works well.
  • 1 cup Shredded Cheddar Cheese Can substitute with mozzarella or cheese blend.
  • 12 ounces Kielbasa Feel free to use any smoked sausage or turkey kielbasa.
  • to taste Salt
  • to taste Pepper
For the Topping
  • 0.5 cup Extra Shredded Cheddar Cheese Use your favorite cheese blend if desired.

Preparation
  1. Pour 3 cups of chicken broth into a 4-6 quart crockpot. Add frozen Mrs. T's Cheddar Pierogies and sliced kielbasa evenly over the broth. Sprinkle 1 cup of shredded cheddar cheese on top, then gently stir to combine.
  2. Cover the crockpot and set it to cook on high for 3 hours or low for 6 hours, avoiding lifting the lid during cooking.
  3. About 30 minutes before cooking time is up, cut cream cheese into cubes and combine in a small saucepan with a bit of broth. Stir over low heat until smooth and creamy, around 5-7 minutes.
  4. Once cooking time is up, pour the creamy mixture into the crockpot and gently fold with a spatula. Top with 0.5 cup of shredded cheddar cheese.
  5. Cook on low for an additional 30 minutes to meld flavors. Serve hot, garnished with sliced green onions.
