Baking Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large mixing bowl, combine 2 cups of applesauce, 1.5 cups of granulated sugar, and 1 cup of vegetable oil.
- Add 4 large eggs to the wet ingredients, one at a time, mixing well after each addition.
- In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 0.5 teaspoon of nutmeg, and 0.5 teaspoon of salt.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
- Pour the batter evenly into the two prepared cake pans, smoothing the tops with a spatula.
- Slide the pans into the preheated oven and bake for 30-35 minutes. Check for doneness with a toothpick.
- Once baked, let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
- In a mixing bowl, beat together 1 cup of softened cream cheese, 0.25 cup of softened butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of cinnamon until smooth and creamy.
- Frost the cooled cakes, placing one layer on a serving plate, spreading frosting in between and on the top and sides.
