Baking Instructions
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine 2 cups of applesauce, 1.5 cups of granulated sugar, and 1 cup of vegetable oil.
  3. Add 4 large eggs to the wet ingredients, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 0.5 teaspoon of nutmeg, and 0.5 teaspoon of salt.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  6. Pour the batter evenly into the two prepared cake pans, smoothing the tops with a spatula.
  7. Slide the pans into the preheated oven and bake for 30-35 minutes. Check for doneness with a toothpick.
  8. Once baked, let the cakes cool in the pans for about 10 minutes, then transfer to wire racks to cool completely.
  9. In a mixing bowl, beat together 1 cup of softened cream cheese, 0.25 cup of softened butter, 3 cups of powdered sugar, 1 teaspoon of vanilla extract, and 1 teaspoon of cinnamon until smooth and creamy.
  10. Frost the cooled cakes, placing one layer on a serving plate, spreading frosting in between and on the top and sides.
