For the Cauliflower
  • 1 head Cauliflower Chopped into florets
  • 2 tablespoons Olive oil For drizzling
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • ½ teaspoon Salt
For the Tortillas
  • 8 small Tortillas
For the Cilantro Lime Crema
  • 1 cup Cashews Can substitute with sunflower seeds
  • ½ cup Water For blending
  • 1 teaspoon Lime juice
  • 1 cup Cilantro Fresh

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Chop the cauliflower into bite-sized florets and place in a large mixing bowl.
  3. Drizzle olive oil over the cauliflower florets, sprinkle with chili powder, cumin, and salt, then toss to coat.
  4. Spread the seasoned cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
  5. In a blender, combine cashews, water, lime juice, and cilantro. Blend until smooth.
  6. Warm the tortillas in a skillet or microwave.
  7. Assemble the tacos by placing roasted cauliflower on each tortilla and drizzling with crema.
