For the Base
  • 2 cups crushed vanilla wafers provide a sweet, soft foundation
  • 1 cup finely chopped pecans add nutty crunch
  • 1 cup powdered sugar sweetens and holds mixture together
  • ½ cup unsweetened cocoa powder deepens chocolate flavor
  • ½ cup bourbon infuses warmth
  • ¼ cup unsweetened shredded coconut optional, adds chewiness
For the Coating
  • 1 cup semi-sweet chocolate chips for luscious coating
  • 1 tablespoon coconut oil smooths chocolate for dipping
Optional Topping
  • ½ cup extra chopped nuts for rolling, adds crunch

Equipment

  • Mixing Bowl
  • Microwave-safe bowl
  • Baking Sheet
  • parchment paper
  • fork

Method

Preparation Steps
  1. In a large mixing bowl, combine the crushed vanilla wafers, chopped pecans, powdered sugar, and cocoa powder until well mixed.
  2. Gradually pour in the bourbon, stirring until the mixture holds together. If using, fold in shredded coconut.
  3. Cover the bowl tightly with plastic wrap and refrigerate for about 30 minutes.
  4. Form small balls (about 1 inch) from the mixture and place them on a parchment-lined baking sheet.
  5. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until melted.
  6. Dip each ball into the melted chocolate, allowing excess chocolate to drip back into the bowl.
  7. Roll dipped balls in extra chopped nuts, if desired, before placing them back on the baking sheet.
  8. Refrigerate the tray for about 15-20 minutes until the chocolate sets.
  9. Serve chilled or at room temperature.
