- In a large mixing bowl, combine the crushed vanilla wafers, chopped pecans, powdered sugar, and cocoa powder until well mixed.
- Gradually pour in the bourbon, stirring until the mixture holds together. If using, fold in shredded coconut.
- Cover the bowl tightly with plastic wrap and refrigerate for about 30 minutes.
- Form small balls (about 1 inch) from the mixture and place them on a parchment-lined baking sheet.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring until melted.
- Dip each ball into the melted chocolate, allowing excess chocolate to drip back into the bowl.
- Roll dipped balls in extra chopped nuts, if desired, before placing them back on the baking sheet.
- Refrigerate the tray for about 15-20 minutes until the chocolate sets.
- Serve chilled or at room temperature.
