  • ½ cup molasses
  • 1 cup water
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • ½ teaspoon salt
For the Topping
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • 1 cup crushed gingersnap cookies

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a mixing bowl, combine flour, brown sugar, molasses, water, butter, eggs, ginger, cinnamon, nutmeg, baking soda, and salt. Mix until smooth for 2-3 minutes.
  3. Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes until a toothpick comes out clean.
  4. Let the cake cool for 10-15 minutes. Poke holes throughout the surface with a skewer or fork.
  5. In a saucepan, combine granulated sugar and 1 cup water over medium heat until sugar dissolves. Pour warm syrup over the cake.
  6. Beat the heavy whipping cream and powdered sugar until soft peaks form for about 3-5 minutes.
  7. Spread the whipped cream evenly over the cooled cake.
  8. Sprinkle crushed gingersnap cookies on top of the whipped cream.
