Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine diced apples, brown sugar, cinnamon, nutmeg, allspice, ground ginger, and salt. Toss until well coated. Let rest for a few minutes.
  3. Stir in unsalted butter and vanilla extract into the apple mixture. Mix thoroughly.
  4. Sprinkle cornstarch into the mixture and mix well until fully incorporated.
  5. In a small bowl, whisk together beaten egg and milk/cream/water for the egg wash. Set aside.
  6. Roll out premade pie dough and cut into circles. Place a circle in each mini pie tin and fill with apple mixture. Cover with another dough circle and crimp edges to seal.
  7. Brush tops with egg wash and sprinkle with coarse brown sugar.
  8. Bake for 20-25 minutes or until golden brown and filling bubbles.
  9. Remove from oven, cool on a wire rack, and serve warm or at room temperature.
