- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine diced apples, brown sugar, cinnamon, nutmeg, allspice, ground ginger, and salt. Toss until well coated. Let rest for a few minutes.
- Stir in unsalted butter and vanilla extract into the apple mixture. Mix thoroughly.
- Sprinkle cornstarch into the mixture and mix well until fully incorporated.
- In a small bowl, whisk together beaten egg and milk/cream/water for the egg wash. Set aside.
- Roll out premade pie dough and cut into circles. Place a circle in each mini pie tin and fill with apple mixture. Cover with another dough circle and crimp edges to seal.
- Brush tops with egg wash and sprinkle with coarse brown sugar.
