Ingredients
  

For the Pastry
  • 2 sheets Puff pastry thawed
For the Filling
  • 8 oz Brie cheese cut into cubes
  • 1 cup Cranberry sauce homemade or store-bought
For the Assembly
  • 1 large Egg beaten for egg wash
  • to taste Salt
  • to taste Pepper
  • to taste Fresh thyme leaves optional

Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheets until they are about ⅛ inch thick.
  3. Cut the puff pastry into squares or circles that are about 3 inches wide.
  4. Place the cut-out pastry pieces onto the prepared baking sheet, spaced apart.
  5. In the center of each pastry piece, place a small cube of Brie cheese.
  6. Spoon about one teaspoon of cranberry sauce over the Brie cheese in each pastry.
  7. Season lightly with salt and pepper and add a few fresh thyme leaves on top.
  8. Fold the corners of the pastry over the filling to create little packages.
  9. Brush the tops of the pastry with the beaten egg.
  10. Bake for 15 to 20 minutes or until the pastry is puffed and golden brown.
  11. Remove from the oven and let cool for a few minutes before serving.
