- Heat a large skillet over medium heat. Brush one side of a flour tortilla with olive oil, then place the tortilla oil-side down in the hot skillet.
- Spread 1 tablespoon of pizza sauce evenly on top of the tortilla in the skillet. Sprinkle ¼ cup of shredded mozzarella cheese over the sauce, followed by a layer of sliced pepperoni, a pinch of Italian seasoning, grated Parmesan, and chopped fresh basil.
- Place a second tortilla on top of the layered ingredients and press down slightly with a spatula.
- Cook the quesadilla for 2 to 3 minutes until the bottom is golden brown and crispy.
- Carefully flip the quesadilla and cook the other side for another 2 to 3 minutes until it is golden and crispy.
