- Preheat your oven to 375°F (190°C).
 - In a large bowl, combine ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
 - In a separate bowl, mix mozzarella cheese, Parmesan cheese, and fresh spinach (if using).
 - Flatten the meat mixture into a rectangle approximately ½ inch thick.
 - Spread the cheese filling over the flattened meat, leaving about 1 inch clear around the edges.
 - Roll the meatloaf up, jelly-roll style, sealing the edges tightly.
 - Transfer the rolled meatloaf seam-side down onto a baking sheet or into a loaf pan.
 - Bake for 45-50 minutes, until the internal temperature reaches 160°F (71°C).
 - In the last 10 minutes of baking, spread marinara sauce over the top.
 - Allow the meatloaf to rest for about 10 minutes before slicing.
 - Slice and serve with extra marinara sauce and your favorite side dishes.
