Cooking Instructions
- In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package directions until al dente, usually about 10-12 minutes. Drain the pasta, reserving ¼ cup of the cooking water, and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant and lightly golden.
- Pour in the zest and juice of the orange, stirring well to combine with the garlic. Allow the mixture to simmer gently for about 2 minutes.
- Pour in the heavy cream, stirring constantly. Allow this blend to simmer for another 2-3 minutes until it slightly thickens.
- Gradually incorporate the grated cheddar and Parmesan cheese into the skillet, stirring until melted and smooth.
- Taste the sauce and season with salt and pepper. Set the sauce aside.
- Add the drained pasta to the skillet and toss gently to coat the pasta in the sauce. Adjust the consistency with reserved pasta water as needed.
- Transfer the pasta to serving bowls and garnish with fresh basil leaves and grated orange zest if desired.
- Serve the Cheesy Orange Pasta immediately while it’s warm.
