Ingredients
  

For the Pasta
  • 250 g pasta Penne or farfalle work best
For the Sauce
  • 1 tablespoon olive oil for sautéing garlic
  • 1 medium orange zested and juiced
  • 3 cloves garlic minced
  • 100 ml heavy cream for creaminess
  • 150 g cheddar cheese grated
  • 50 g Parmesan cheese grated
  • Salt to taste
  • Pepper to taste

  • Fresh basil leaves optional
  • Grated orange zest optional

Method
 

Cooking Instructions
  1. In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package directions until al dente, usually about 10-12 minutes. Drain the pasta, reserving ¼ cup of the cooking water, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant and lightly golden.
  3. Pour in the zest and juice of the orange, stirring well to combine with the garlic. Allow the mixture to simmer gently for about 2 minutes.
  4. Pour in the heavy cream, stirring constantly. Allow this blend to simmer for another 2-3 minutes until it slightly thickens.
  5. Gradually incorporate the grated cheddar and Parmesan cheese into the skillet, stirring until melted and smooth.
  6. Taste the sauce and season with salt and pepper. Set the sauce aside.
  7. Add the drained pasta to the skillet and toss gently to coat the pasta in the sauce. Adjust the consistency with reserved pasta water as needed.
  8. Transfer the pasta to serving bowls and garnish with fresh basil leaves and grated orange zest if desired.
  9. Serve the Cheesy Orange Pasta immediately while it’s warm.
