Ingredients
  

  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • ¼ cup basil pesto
  • 2 cloves minced garlic
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 cup sour cream
  • ¼ cup fresh chopped basil
  • 8 ounces fresh mozzarella cut into chunks
  • 1 cup shredded provolone cheese
  • ½ cup freshly grated parmesan cheese
  • Crusty bread crackers, or tortilla chips

Method
 

  1. Preheat your oven to 400°F.
  2. Arrange 1 cup of cherry tomatoes in a baking dish. Drizzle them with olive oil, then sprinkle over the basil pesto, minced garlic, kosher salt, and black pepper. Mix well to coat.
  3. Bake the tomatoes for 15 minutes.
  4. Mix together sour cream, chopped basil, mozzarella, provolone, and parmesan in a bowl.
  5. Combine the cheese mixture with the roasted tomatoes from the oven.
  6. Top the dip with halved cherry tomatoes.
  7. Bake for another 20 minutes.
  8. Garnish with fresh basil before serving.
