Irresistibly Fluffy German Pancakes: A Breakfast Game Changer

I still remember the first time I tasted those puffed-up clouds of delight—German Pancakes, also known as Dutch Baby pancakes. It was a cozy Sunday morning, sunlight streaming through the kitchen window, as the enticing aroma of butter melting in the oven filled the air.

Course: Breakfast
Cuisine: German

Ingredients

  • 6 large eggs
  • 1 cup milk 240 ml
  • 1 cup all-purpose flour 120 g
  • a dash salt
  • 1 teaspoon vanilla extract 5 ml
  • 5 tablespoons butter 70 g

Method

  1. Preheat Oven: Set your oven to 425°F (220°C). Place the butter in a 9x13-inch metal baking dish and let it melt while the oven heats up.
  2. Blend Ingredients: In a blender, combine the eggs, milk, flour, salt, and vanilla extract. Blend until the mixture is smooth and free of lumps, about 30 seconds.
  3. Add Batter: Carefully pour the blended batter into the baking dish over the melted butter. Don’t worry if it looks a little bubbly; that’s part of the magic!
  4. Bake: Slide the dish into the oven and bake for 22-27 minutes. Keep an eye on it until the edges are golden brown and the center is puffy.
  5. Serve: Remove from oven and sprinkle generously with powdered sugar and syrup before slicing. Slice into pieces and enjoy while it's warm!

Notes

  • Pans Matter: Use a metal or cast iron pan to achieve the best puff and browning; non-stick pans may not provide the same effect.
  • Melt Butter Fully: Make sure the butter is completely melted before adding the batter—this prevents any sticking and enhances flavor.
  • Blend Smoothly: To avoid lumps, blend the ingredients until completely smooth; this helps the German pancakes rise beautifully.
  • Don’t Open the Oven: Resist the urge to peek while baking; opening the oven door lets heat escape and can affect the puffiness.
  • Serve Warm: These pancakes taste best warm, so serve them straight from the oven for that delightful, fluffy experience.
