Method
 

Dough Preparation
  1. Prepare the dough ingredients by combining flour, sugar, yeast, salt, and cinnamon in a bowl.
  2. Combine wet ingredients in a separate bowl, whisking water, pumpkin purée, vegetable oil, and egg.
  3. Pour wet ingredients into dry mixture and mix until a shaggy dough forms.
  4. Knead the dough for about 6 minutes using a stand mixer or manually until slightly tacky.
  5. Transfer the dough to a greased bowl and let it rise for 2 hours or until doubled in size.
Shaping and Baking
  1. Gently deflate the dough and divide it into two equal pieces.
  2. Roll each piece into a rectangle and tightly roll up to form a log.
  3. Lengthen the log into a 24" rope and coil it onto a prepared baking sheet.
  4. Cover the loaves with greased plastic wrap and let them rise for 1 hour.
  5. Preheat the oven to 350°F (175°C).
  6. Brush the loaves with egg wash and bake for 35 to 40 minutes.
  7. Remove from the oven and cool completely before slicing.
