  • 1 large Italian sub roll or use 2 smaller hoagie rolls
For the Cheese
  • 4 slices provolone cheese
For the Meats
  • 6-8 slices Genoa salami traditional and flavorful
  • 4-6 slices deli ham adds a touch of sweetness
  • 4-6 slices pepperoni optional but traditional
For the Vegetables
  • 1 small head iceberg lettuce shredded finely
  • 1 small red onion thinly sliced
  • 1 medium ripe tomato ensures juicy freshness
  • ½ cup sliced pepperoncini adds a zesty kick
For the Dressing
  • cup mayonnaise creamy base
  • 2 tablespoon red wine vinegar offers a tangy contrast
  • 2 tablespoon extra-virgin olive oil enhances flavor
  • 1 teaspoon dried oregano classic Italian herb
  • ½ teaspoon dried basil optional
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes optional heat
  • 2 tablespoon grated Parmesan cheese optional

  • 2 tablespoon softened unsalted butter or olive oil for toasting

Method
 

Preparation
  1. Prepare the vegetables by shredding lettuce, slicing red onion, slicing the tomato, and draining the pepperoncini.
  2. Make the dressing by whisking mayonnaise, red wine vinegar, olive oil, oregano, basil, garlic powder, salt, pepper, red pepper flakes, and sugar until emulsified.
  3. Build the grinder salad by mixing the shredded lettuce, onion, and pepperoncini with the dressing until coated.
  4. Toast the roll by spreading butter or oil on the cut sides and broiling until golden.
  5. Layer cheese on the toasted roll, return to broiler until melted.
  6. Layer the meats onto the roll and return to broiler briefly for warmth.
  7. Add tomato slices over the meats and season with salt and pepper.
  8. Top with grinder salad mound and drizzle extra dressing if desired.
  9. Close the sandwich and let it rest for several minutes before serving.
  10. Slice the sandwich and serve immediately.
