Ingredients
  

For the Stir Fry
  • 1 pound ground beef lean
  • 2 tablespoons olive oil for sautéing
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium red bell pepper sliced
  • 1 medium zucchini sliced
  • 1 cup cherry tomatoes halved
For the Spices
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 0.25 teaspoon red pepper flakes optional
  • salt to taste
  • black pepper to taste
For the Finish
  • 0.25 cup pitted Kalamata olives sliced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon lemon juice
  • 0.5 cup feta cheese crumbled

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-5 minutes until translucent.
  2. Stir in 2 cloves of minced garlic and cook for an additional minute until fragrant.
  3. Add 1 pound of ground beef, breaking it up as it cooks. Sauté for 6-8 minutes until fully browned.
  4. Add sliced red bell pepper and zucchini, cooking for about 5 minutes until they start to soften.
  5. Stir in halved cherry tomatoes, dried oregano, ground cumin, paprika, red pepper flakes, salt, and black pepper. Cook for an additional 3-4 minutes.
  6. Mix in Kalamata olives and fresh parsley, then remove from heat.
  7. Drizzle 1 tablespoon of lemon juice over the stir fry, then add crumbled feta cheese. Stir gently to combine.
  8. Serve hot, ladled over rice, quinoa, or couscous.
