Step-by-Step Instructions for Mushroom Stuffed Chicken Breast
  1. Preheat your oven to 200°C (390°F) or 180°C for fan-forced settings.
  2. Carefully cut a pocket into each chicken breast, aiming for a deep 3 to 4-inch pocket and season with half of the salt and pepper.
  3. Melt 2 tablespoons of butter in a skillet and add chopped mushrooms. Cook for about 3 minutes until golden brown.
  4. Add minced garlic, dried thyme, and remaining salt and pepper to the mushrooms. Sauté for another 2 minutes.
  5. Stir in the baby spinach and cook for about 30 seconds until wilted.
  6. Spoon the mushroom and spinach mixture into the pockets of each chicken breast and top with cheese.
  7. Use toothpicks to seal the openings of the stuffed chicken.
  8. Sear the stuffed chicken in a skillet over medium-high heat for about 1.5 minutes per side until golden brown.
  9. Transfer the skillet with the chicken to the oven and bake for approximately 15 minutes, or until the internal temperature reaches 65°C (149°F).
  10. Let the chicken rest for about 5 minutes before serving.
