Step-by-Step Instructions for Mushroom Stuffed Chicken Breast
- Preheat your oven to 200°C (390°F) or 180°C for fan-forced settings.
 - Carefully cut a pocket into each chicken breast, aiming for a deep 3 to 4-inch pocket and season with half of the salt and pepper.
 - Melt 2 tablespoons of butter in a skillet and add chopped mushrooms. Cook for about 3 minutes until golden brown.
 - Add minced garlic, dried thyme, and remaining salt and pepper to the mushrooms. Sauté for another 2 minutes.
 - Stir in the baby spinach and cook for about 30 seconds until wilted.
 - Spoon the mushroom and spinach mixture into the pockets of each chicken breast and top with cheese.
 - Use toothpicks to seal the openings of the stuffed chicken.
 - Sear the stuffed chicken in a skillet over medium-high heat for about 1.5 minutes per side until golden brown.
 - Transfer the skillet with the chicken to the oven and bake for approximately 15 minutes, or until the internal temperature reaches 65°C (149°F).
 - Let the chicken rest for about 5 minutes before serving.
