For the Mutton
  • 500 grams Mutton Cut into pieces, opt for bone-in for more flavor.
For the Sauce
  • 2 medium Tomatoes Pureed, use ripe tomatoes for a luscious texture.
  • 1 cup Water Adjust to your desired gravy consistency.
  • Salt To taste, essential for enhancing all flavors in the dish.
For Garnish
  • Fresh Coriander Leaves For a burst of freshness on top.

Method
 

Directions
  1. Heat 3 tablespoons of oil in a large pot over medium heat. Add 2 teaspoons of cumin seeds and 1 teaspoon of mustard seeds. Allow to sizzle for about 30 seconds.
  2. Add 2 medium finely chopped onions and sauté until golden brown for 5-7 minutes.
  3. Stir in 2 tablespoons of ginger-garlic paste and cook for another 2-3 minutes.
  4. Add 1 tablespoon of red chili powder, 1 teaspoon of turmeric powder, 2 teaspoons of coriander powder, and salt to taste. Mix well.
  5. Introduce 500 grams of mutton and sauté for about 5-8 minutes until browned.
  6. Pour in the pureed tomatoes and cook for about 10 minutes, until oil separates.
  7. Add 1 cup of water, cover, and simmer for 45-60 minutes until the mutton is tender.
  8. Stir in 2 teaspoons of garam masala and allow to simmer for another 5 minutes.
  9. Garnish with fresh coriander leaves and serve hot.
