  • 1 tablespoon Fresh mint
  • 1 teaspoon Lemon zest
  • Freshly ground black pepper to taste
For the Phyllo Rolls
  • 8 sheets Phyllo pastry
  • 3 tablespoons Olive oil divided
For the Sweet Chili Honey
  • ¼ cup Honey
  • 1 tablespoon Chili flakes
  • 1 tablespoon Lemon juice

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the crumbled feta, dill, mint, lemon zest, and black pepper until creamy.
  3. On a clean surface, layer one sheet of phyllo, brush with olive oil, and add a second sheet on top.
  4. Cut the layered phyllo into 4 equal strips.
  5. Place a spoonful of the feta filling at the end of each phyllo strip and roll them up.
  6. Seal the filling by folding the sides and rolling into a cylinder.
  7. Arrange the rolls seam-side down on the baking sheet, leaving space between them.
  8. Brush the tops with remaining olive oil for a golden finish.
  9. Bake for 18-20 minutes until golden brown and crispy.
  10. In a saucepan, warm honey, chili flakes, and lemon juice until runny.
  11. Let the rolls cool slightly, then drizzle with chili honey before serving.
