  • 1 sheet Puff pastry ensure it's fully thawed before rolling
  • 8 oz Brie cheese creamy delight that melts beautifully
  • 1 cup Pistachios or substitute with walnuts
For Assembly
  • 2 tablespoon Honey for drizzling
  • 1 large Egg beaten for egg wash
  • 1 tablespoon Fresh thyme leaves optional, can substitute with rosemary
  • Salt to taste
  • Pepper to taste

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. On a lightly floured surface, roll out the thawed puff pastry sheet gently.
  3. Slice the rolled-out puff pastry into 2-inch squares, aiming for about 12 squares.
  4. Place a square of Brie cheese in the center of each puff pastry square.
  5. Drizzle honey over each piece of Brie and sprinkle with salt, pepper, and thyme if using.
  6. Fold the corners of the pastry over the Brie and pinch seams together.
  7. Roll each sealed Brie bite in finely chopped pistachios until coated.
  8. Transfer the pistachio-coated Brie bites onto the prepared baking sheet.
  9. Apply beaten egg to the tops of each pastry using a pastry brush.
  10. Bake for 15-20 minutes until puffed and golden, then cool for a few minutes before serving.
