- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the thawed puff pastry sheet gently.
- Slice the rolled-out puff pastry into 2-inch squares, aiming for about 12 squares.
- Place a square of Brie cheese in the center of each puff pastry square.
- Drizzle honey over each piece of Brie and sprinkle with salt, pepper, and thyme if using.
- Fold the corners of the pastry over the Brie and pinch seams together.
- Roll each sealed Brie bite in finely chopped pistachios until coated.
- Transfer the pistachio-coated Brie bites onto the prepared baking sheet.
- Apply beaten egg to the tops of each pastry using a pastry brush.
- Bake for 15-20 minutes until puffed and golden, then cool for a few minutes before serving.
