  • 1 cup Pomegranate Juice
  • ½ cup Orange Juice
  • 2 tablespoons Honey
  • 1 tablespoon Soy Sauce
  • 2 teaspoons Apple Cider Vinegar
  • 1 teaspoon Minced Garlic
  • 1 teaspoon Grated Ginger
  • to taste Salt
  • to taste Pepper
For the Chicken
  • 4 pieces Chicken Breasts
  • 2 tablespoons Olive Oil for cooking
For the Garnish
  • ½ cup Fresh Pomegranate Seeds
  • 2 slices Orange Slices
  • 2 tablespoons Chopped Parsley

Method
 

Instructions
  1. In a large mixing bowl, combine all marinade ingredients and whisk until well blended.
  2. Place chicken breasts into the bowl with the marinade and refrigerate for at least 1 hour.
  3. Preheat your grill or skillet over medium heat.
  4. Remove chicken from marinade and let excess liquid drip off.
  5. Drizzle olive oil into the skillet or brush it onto the grill.
  6. Cook chicken for about 6-7 minutes on each side until golden brown and internal temperature reaches 165°F (74°C).
  7. In a small saucepan, heat the reserved marinade until boiling, then reduce to a simmer for 5-7 minutes to thicken.
  8. Drizzle the glaze over each chicken breast once thickened.
  9. Transfer chicken to a serving platter and garnish with fresh pomegranate seeds, orange slices, and parsley.
  10. Serve immediately while hot.
