- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice the delicata squash in half lengthwise, scoop out the seeds, and cut into 1-inch thick half-moons. Toss with olive oil, salt, and pepper.
- Spread the squash on the baking sheet and roast for 25–30 minutes, flipping halfway through.
- While the squash roasts, slice the onion, toss in flour, and fry in hot oil for 3–5 minutes until golden-brown.
- Drain the crispy onions on paper towels, season with salt, garlic powder, and paprika.
- Toss the roasted squash in a serving dish and top with crispy onions before serving.
