Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Prick each potato several times with a fork, rub with olive oil, and season with salt and black pepper.
  3. Bake the potatoes on a baking sheet for about 45 to 55 minutes, until tender.
  4. In a skillet, cook the ground beef over medium heat until browned, then drain excess fat and add taco seasoning and a splash of water. Simmer for 3 minutes.
  5. Warm the drained black beans in a small saucepan or microwave.
  6. Remove the potatoes from the oven, slice lengthwise, and fluff the insides with a fork.
  7. Spoon the beef over the potatoes, followed by the black beans, and top with shredded cheese.
  8. Finish with salsa, green onions, and sour cream on top.
