  • 500 g ground lamb freshly ground
  • 1 cup breadcrumbs
  • 1 large egg large
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ¼ cup red onion finely chopped
  • 2 tablespoons fresh parsley chopped

For the Quinoa Base
  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
For the Toppings
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • ½ cup crumbled feta cheese
  • ½ cup kalamata olives sliced
  • to taste tzatziki sauce

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 200°C (about 400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground lamb, breadcrumbs, egg, dried oregano, ground cumin, garlic powder, red onion, parsley, salt, and pepper. Mix until well-blended.
  3. Shape the mixture into 12-14 evenly-sized meatballs and place on the prepared baking sheet.
  4. Bake the meatballs for 15-20 minutes until golden and cooked through.
  5. While the meatballs bake, rinse quinoa, bring water to a boil in a saucepan, stir in quinoa, reduce heat, cover, and simmer for about 15 minutes.
  6. In a small bowl, whisk olive oil, lemon juice, and seasoning.
  7. Assemble the bowls with quinoa, meatballs, cucumber, cherry tomatoes, feta, and olives.
  8. Drizzle with tzatziki sauce and dressing before serving.
