  • 3 cups cooked white rice
  • 1 cup diced tomatoes
  • 1 can canned black beans rinsed and drained
  • 1 cup frozen corn thawed
  • 1 cup diced bell pepper any color you prefer
  • 1 medium diced red onion
For the Cheese Sauce
  • ¾ cup queso blanco cheese sauce
For Garnish
  • ¼ cup fresh cilantro chopped

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Prepare and season steak with chili powder, garlic powder, salt, and pepper.
  2. Add the seasoned steak strips to the hot skillet and cook for 4–5 minutes until done. Remove steak and set aside.
  3. In a large mixing bowl, combine cooked rice, diced tomatoes, black beans, corn, bell pepper, and red onion. Stir gently.
  4. Pour in queso blanco cheese sauce and mix to coat all ingredients evenly.
  5. Fold the cooked steak back into the rice mixture, being careful not to break apart the rice.
  6. Garnish with chopped cilantro and serve hot in bowls or as a filling for burritos or wraps.
