  • 1 pound Italian sausage sweet or spicy, as preferred
For the Veggies
  • 2 cups bell peppers chopped
  • 1 cup red onion chopped
  • 2 cups broccoli florets chopped
  • 1 medium zucchini sliced
  • 1 pound baby potatoes halved
For the Seasoning
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
For Garnishing
  • 2 tablespoons fresh parsley optional

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop all the vegetables including bell peppers, red onion, broccoli, zucchini, and baby potatoes. Place them into a large mixing bowl.
  3. Slice the Italian sausage into bite-sized pieces and add them to the bowl with the veggies.
  4. Drizzle the olive oil over the mixture. Then sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss everything thoroughly to coat.
  5. Spread the seasoned sausage and vegetables in a single layer on the sheet pan.
  6. Place the sheet pan in the oven and bake for 30-35 minutes, stirring halfway through.
  7. Once baked, remove from the oven and sprinkle with fresh parsley, then serve warm.
