- Preheat your oven to 400°F (200°C).
- Wash and chop all the vegetables including bell peppers, red onion, broccoli, zucchini, and baby potatoes. Place them into a large mixing bowl.
- Slice the Italian sausage into bite-sized pieces and add them to the bowl with the veggies.
- Drizzle the olive oil over the mixture. Then sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss everything thoroughly to coat.
- Spread the seasoned sausage and vegetables in a single layer on the sheet pan.
- Place the sheet pan in the oven and bake for 30-35 minutes, stirring halfway through.
- Once baked, remove from the oven and sprinkle with fresh parsley, then serve warm.
