Marination and Preparation
- In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create a flavorful marinade. Place the flank steak or sirloin in a resealable bag, pour the marinade over, and let marinate for at least 30 minutes.
- Slice the zucchinis into ½ inch thick rounds. Toss the zucchini slices with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
Grilling
- Preheat your grill to medium-high heat (around 400°F). Grill the marinated steak for 4-5 minutes per side for medium-rare. Let it rest for 5 minutes after grilling.
- Grill the seasoned zucchini rounds for 3-4 minutes per side until tender and marked.
Assembling the Bowl
- Begin with a base of cooked brown rice or quinoa, then add grilled steak slices, grilled zucchini, halved cherry tomatoes, and avocado.
- Drizzle reserved marinade sauce over the assembled bowl, and garnish with sesame seeds and fresh cilantro. Serve with lime wedges.
