  • 1 tablespoon vegetable oil helps to sauté the onion and garlic
  • 1 pound ground beef or ground turkey/chicken for lighter option
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 tablespoons chili powder adds warmth and flavor
  • 1 teaspoon ground cumin earthy flavor
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper freshly ground
  • 10 ounces red enchilada sauce divided
  • 4 pieces corn tortillas or flour tortillas if preferred
  • 2 cups shredded cheddar cheese for topping

Method
 

Cooking Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients.
  2. In a large skillet over medium heat, add vegetable oil and sauté diced onion for about 3 minutes until softened.
  3. Stir in minced garlic and cook for 1 minute. Then, add ground beef and cook until browned, about 6–8 minutes.
  4. Sprinkle chili powder, ground cumin, salt, and black pepper over the mixture and stir to combine, cooking for 1–2 minutes.
  5. Pour half of the enchilada sauce into the beef mixture, stirring to combine and simmer for 2 minutes.
  6. Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
  7. Arrange four corn tortillas in the dish, covering the bottom completely.
  8. Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup of shredded cheddar cheese.
  9. Repeat the layering process with remaining tortillas, beef mixture, and another cup of cheddar cheese.
  10. Pour the remaining enchilada sauce over the top of the casserole.
  11. Bake uncovered for 20 minutes, until the cheese is melted and bubbly.
  12. Let the casserole cool for 5 minutes before serving warm.
