Preparation Steps
  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it inside the oven to heat.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add leeks, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir occasionally for 15-20 minutes until leeks are golden brown.
  3. On a floured surface, roll out your pizza dough to about a 12-inch round.
  4. Transfer the rolled-out dough onto a floured pizza peel or a greased baking sheet.
  5. Spread ½ cup of ricotta cheese over the dough, then top with 1 cup of shredded mozzarella cheese.
  6. Evenly distribute the sautéed leeks over the cheese.
  7. Bake the pizza for 12-15 minutes until the crust is golden and cheese is bubbling.
  8. Drizzle 2 tablespoons of spicy honey over the hot pizza before serving.
  9. Garnish with fresh thyme or parsley and let cool for 10 minutes before slicing.
