Cheesy Buffalo Chicken Burrito Instructions
  1. Pat the chicken dry, cut into small pieces, and toss with olive oil, salt, pepper, garlic, onion powder, and paprika.
  2. Heat a skillet, add chicken, and cook for 7–9 minutes until browned.
  3. Add buffalo sauce and butter, stir until melted and simmer for 2–3 minutes.
  4. Mix cheddar and Monterey Jack cheeses with cream cheese, sour cream, green onions, cilantro, and jalapeño in a bowl.
  5. Combine cooked chicken mixture with cheese mixture and fold together.
  6. Warm rice with a pinch of salt and lime juice; prepare other fillings as needed.
  7. Warm tortillas in a skillet for about 15–20 seconds per side.
  8. On each tortilla, layer rice, cheesy chicken mixture, beans, corn, lettuce, onions, and tomatoes.
  9. Fold sides of tortilla inward, roll tightly to secure fillings.
  10. In a skillet, cook burritos seam-side down for 2–3 minutes per side until golden brown.
  11. Rest burritos for 1–2 minutes, slice, and serve with sauces and lime wedges.
