- Melt 1 tablespoon of butter in a skillet over medium heat. Add the chicken and cook for 5-6 minutes each side until golden brown. Remove and set aside.
- Add 2 tablespoons of flour and 1 teaspoon of garlic powder to the skillet. Stir for 1 minute to create a roux.
- Gradually whisk in 1 cup of chicken broth and bring to a simmer. Return chicken to skillet and simmer for 10-15 minutes.
- Boil water in a pot. Add 4 cups of diced potatoes and cook for 15-20 minutes until fork-tender. Drain and keep warm.
- Mash warm potatoes with 2 tablespoons of butter, ½ cup of heavy cream, and 2 tablespoons of Parmesan cheese. Stir in ¼ cup of milk and season with salt and pepper.
- Serve chicken with gravy over cheesy mashed potatoes.
