Preparation Steps
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced chicken apple sausage and cook for about 5 minutes until golden brown.
- Stir in the diced onion, minced garlic, chopped bell pepper, and sliced zucchini. Cook for 3-4 minutes until softened.
- Toss in the penne pasta and mix it well with the sausage and veggies.
- Pour in the chicken broth and add the Italian seasoning. Bring to a boil.
- Reduce heat to low and let simmer for 10-12 minutes until pasta is al dente.
- Stir in the halved cherry tomatoes and season with salt and pepper to taste. Cook for an additional 2-3 minutes.
- Remove from heat and consider adding fresh basil for garnish.
