  • 1 pound boneless leg of lamb or lamb shoulder cut into 1-inch cubes
  • 1 large onion finely chopped
  • 1 teaspoon garlic minced
  • 2 teaspoons garam masala powder
  • 1 teaspoon yellow curry powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon salt
  • 1 400 ml coconut milk opt for full-fat
  • 1 tablespoon tomato paste
  • 2 medium potatoes peeled and cut into 1-inch pieces
  • 2 medium carrots peeled and cut into 1-inch pieces
  • 1 bunch fresh cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Heat the oil in a large skillet over medium heat and brown the lamb for 5-7 minutes.
  2. Sauté the chopped onion and minced garlic until the onion is soft.
  3. Add garam masala, yellow curry powder, cumin seeds, and salt; stir and cook for 1 minute.
  4. Pour in coconut milk and tomato paste, cooking for 2-3 minutes until bubbling.
  5. Incorporate potatoes and carrots, and stir to combine.
  6. Cover and simmer for 1 hour on low heat, or transfer to a slow cooker for 4-6 hours on high.
  7. Garnish with fresh cilantro and serve alongside rice or naan.
