- In a small bowl, combine 1 cup of warm milk and 1 tablespoon of sugar. Sprinkle 2 teaspoons of active dry yeast on top and let sit for 5-10 minutes until bubbly.
- In a large mixing bowl, whisk together 2 cups of flour and ½ teaspoon of salt. Create a well, add the yeast mixture, 2 tablespoons of melted butter, and 1 large egg. Mix until a soft dough forms.
- Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
- Place kneaded dough in a greased bowl, cover with a cloth, and let it rise for 1 hour until doubled in size.
- Cook 1 cup of ground sausage in a skillet over medium heat until browned, about 5-7 minutes. Drain excess fat and let it cool.
- Punch down the dough, divide into 12 pieces, roll into balls, flatten slightly, and fill with sausage and mozzarella. Pinch to seal.
- Pinch the sealed bun tops to form 'petals' and arrange on a baking sheet lined with parchment paper.
- Cover buns with a cloth and let rise for 30 minutes. Preheat oven to 375°F (190°C).
- Whisk the second large egg. Brush egg wash over the buns and sprinkle with seeds if desired.
