Preparation Steps
- In a large pot, heat 1 tablespoon of olive oil over medium heat until shimmering.
- Add 1 cup of chopped onions and 1 cup of chopped bell peppers, sauté for about 5 minutes until tender.
- Next, add 2 cloves of minced garlic and 1 pound of ground beef to the pot. Cook for 6-8 minutes until browned.
- Stir in 1 tablespoon of chili powder, 1 teaspoon cumin, 1 teaspoon paprika, ½ teaspoon cayenne pepper, and ½ teaspoon salt.
- Pour in 1 can (15 ounces) of diced tomatoes along with 1 can (15 ounces) of kidney beans, and add 1 cup of beef broth.
- Bring to a gentle simmer then reduce heat to low, cooking uncovered for 30-40 minutes, stirring occasionally.
- Taste the chili and adjust seasoning if necessary before serving.
