- Cook the rice noodles according to the package instructions, usually taking around 5 to 7 minutes. Drain and rinse under cold water.
- In a skillet, heat vegetable oil over medium-high heat. Add minced garlic and ginger, stir-fry for about 30 seconds until fragrant.
- Add ground chicken, breaking it up. Cook for about 5 minutes until browned. Season with salt and black pepper.
- Stir in sliced red bell pepper and julienned carrot. Cook for 2 to 3 minutes until tender-crisp.
- Add cooked rice noodles, sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Toss together for 1 to 2 minutes.
- Stir in most green onions, reserving some for garnish. Serve the noodles garnished with remaining green onions.
