  • 1 block (8 ounces) feta cheese melts beautifully

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine halved baby potatoes, olive oil, oregano, salt, and black pepper. Toss together until well-coated.
  3. Spread the seasoned potatoes in a single layer on a baking sheet, leaving room between each piece, and nestle the peeled garlic cloves among them.
  4. Place the block of feta cheese in the center of the baking sheet and optionally drizzle olive oil over it.
  5. Roast in the preheated oven for 25-30 minutes, until potatoes are golden brown and crispy, and feta is softening.
  6. Remove from the oven and let cool for a few minutes. Mash the baked feta and garlic together with a fork.
  7. Serve immediately, garnished with parsley and red pepper flakes if desired.
