Preparation Steps
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine halved baby potatoes, olive oil, oregano, salt, and black pepper. Toss together until well-coated.
- Spread the seasoned potatoes in a single layer on a baking sheet, leaving room between each piece, and nestle the peeled garlic cloves among them.
- Place the block of feta cheese in the center of the baking sheet and optionally drizzle olive oil over it.
- Roast in the preheated oven for 25-30 minutes, until potatoes are golden brown and crispy, and feta is softening.
- Remove from the oven and let cool for a few minutes. Mash the baked feta and garlic together with a fork.
- Serve immediately, garnished with parsley and red pepper flakes if desired.
