Step‑by‑Step Instructions
  1. Prepare Ingredients: Slice the onion and chop the garlic, rosemary, thyme, and parsley. Set aside.
  2. Make the Marinade: Combine olive oil, minced garlic, fresh herbs, salt, black pepper, paprika, lemon juice, and soy sauce in a large bowl.
  3. Marinate the Chicken: Coat the chicken breasts with the marinade. Marinate for at least 30 minutes or refrigerate overnight.
  4. Layer Onions in the Crockpot: Place sliced onion in the bottom of the crockpot.
  5. Add the Chicken and Broth: Place marinated chicken on top of onions and pour chicken broth over it.
  6. Sprinkle Mixed Vegetables: Add chopped mixed vegetables over the chicken.
  7. Choose Cooking Time: Cover and set the crockpot to cook on low for 6–8 hours or high for 3–4 hours.
