- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 chopped large onion and sauté for about 5 minutes until it's translucent and fragrant. Then, stir in 2 minced garlic cloves and cook for an additional minute.
- Add 1 pound of ground beef and 1 pound of ground pork to the skillet, using a wooden spoon to break up the meat as it cooks for about 8-10 minutes until browned.
- Carefully transfer the meat mixture into your slow cooker and scrape any delicious bits from the skillet.
- Add 1 can of diced tomatoes, 1 can of drained and rinsed kidney beans, 1 can of drained and rinsed black beans, 1 can of tomato paste, and 1 cup of beef broth into the slow cooker. Stir well.
- Sprinkle in 2 tablespoons of chili powder, 1 teaspoon of ground cumin, 1 teaspoon of paprika, ½ teaspoon of cayenne pepper, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Mix thoroughly.
- Cover the slow cooker and set it to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
