  1. Cook the rice according to package instructions, typically takes about 15 minutes. Set aside to keep warm.
  2. Heat 1 tablespoon of oil in a large skillet over medium heat for about 1-2 minutes.
  3. Add peeled and deveined shrimp to the hot pan. Cook for 3-4 minutes, flipping midway, until pink and opaque.
  4. Pour ½ cup of teriyaki sauce over the shrimp, stirring gently, and cook for another 2 minutes until the sauce thickens.
  5. Add chopped vegetables to the pan and stir-fry for 2-3 minutes until they begin to soften.
  6. Spoon the shrimp and vegetable mixture over the warm cooked rice in bowls.
  7. Garnish with sliced green onions and optional sesame seeds before serving.
