- In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add 1 tablespoon of red curry paste, stirring continuously for about 1 minute until fragrant.
- Pour in 4 cups of coconut milk and 1 cup of vegetable broth, stirring gently until the curry paste is completely dissolved. Heat until it starts to simmer.
- Add 1 cup of mixed vegetables and 1 cup of your chosen protein to the pot. Stir well to incorporate everything, then reduce heat to medium-low and let it simmer for about 15 minutes.
- Once the vegetables are tender, stir in 1 tablespoon of soy sauce and 1 tablespoon of fresh lime juice. Let the mixture simmer for an additional 2-3 minutes.
- Ladle the soup into bowls while it’s hot and garnish with fresh herbs.
