  • 1 cup milk chocolate chips
  • 12 squares graham cracker broken into pieces
For the Topping
  • 6 large marshmallows halved

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. Cream together 1 cup of softened butter, 1 cup of granulated sugar, and 1 cup of brown sugar until light and fluffy.
  3. Add 2 large eggs one at a time, then mix in 1 teaspoon of vanilla extract.
  4. In a separate bowl, whisk together 2.5 cups of flour, 1 teaspoon of baking soda, and 0.5 teaspoon of salt.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Mix in 1 cup of milk chocolate chips evenly into the dough.
  7. Place pieces of broken graham cracker into the bottom of each muffin well.
  8. Fill each muffin well about two-thirds full with the cookie dough.
  9. Bake for 10 minutes until edges are golden brown.
  10. Add a halved marshmallow to each cookie cup and place back in the oven.
  11. Broil for 1-2 minutes until marshmallows are toasted.
  12. Allow to cool for 5 minutes in the pan before transferring to a wire rack.
