Preparation Steps
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and peel the carrots. This vibrant preparation is essential to bring out the natural sweetness.
- Bring a large pot of water to a rolling boil and add the prepared carrots. Cook for about 10 minutes until just tender.
- Drain the carrots in a colander, letting any excess water escape.
- Arrange the carrots in a single layer on your prepared baking sheet.
- Using the bottom of a sturdy glass or a potato masher, gently smash each carrot until flattened slightly.
- In a small bowl, whisk together the olive oil, honey, and minced garlic until smooth.
- Brush or drizzle the honey-garlic mixture evenly over each of the smashed carrots.
- Sprinkle salt and black pepper over the carrots.
- Roast the carrots for about 15–20 minutes until the edges are golden brown and crispy.
