Marinating and Cooking
- In a medium bowl, combine the sweet chili sauce, soy sauce, grated ginger, and minced garlic. Add chicken thighs and marinate for at least 20 minutes.
- Heat vegetable oil in a skillet over medium heat. Add marinated chicken thighs and cook for 6–8 minutes on each side until cooked through.
- Remove chicken from skillet and let it rest before slicing.
Preparing the Rice and Drizzle
- Prepare jasmine rice according to package instructions and fluff once cooked.
- In a separate bowl, whisk together the coconut milk, lime juice, lime zest, honey, red pepper flakes, salt, and pepper until smooth.
Assembling the Bowls
- Top each bowl with sliced chicken, red bell pepper, diced cucumber, and shredded carrot. Sprinkle with chopped cilantro.
- Drizzle with coconut lime drizzle and serve immediately.
