Method
 

Marinating and Cooking
  1. In a medium bowl, combine the sweet chili sauce, soy sauce, grated ginger, and minced garlic. Add chicken thighs and marinate for at least 20 minutes.
  2. Heat vegetable oil in a skillet over medium heat. Add marinated chicken thighs and cook for 6–8 minutes on each side until cooked through.
  3. Remove chicken from skillet and let it rest before slicing.
Preparing the Rice and Drizzle
  1. Prepare jasmine rice according to package instructions and fluff once cooked.
  2. In a separate bowl, whisk together the coconut milk, lime juice, lime zest, honey, red pepper flakes, salt, and pepper until smooth.
Assembling the Bowls
  1. Top each bowl with sliced chicken, red bell pepper, diced cucumber, and shredded carrot. Sprinkle with chopped cilantro.
