  • 1 cup fresh pineapple peeled and diced
  • 1 cup ripe mango sliced
  • 2 kiwi sliced
  • 1 small papaya peeled and diced
  • 1 medium ripe banana sliced
  • ½ cup pomegranate seeds
For the Citrus Dressing
  • 1 orange zested and juiced
  • 2 tablespoon lime juice freshly squeezed
  • ¼ cup fresh mint leaves chopped
  • 1 tablespoon honey optional
  • 1 pinch salt

Method
 

Preparation Steps
  1. Peel and seed the pineapple, mango, kiwi, papaya, and banana. Dice them into uniform, bite-sized pieces.
  2. In a large mixing bowl, gently combine the diced pineapple, sliced mango, kiwi, papaya, and banana.
  3. Sprinkle in the pomegranate seeds and gently fold them into the mixed fruits.
  4. In a small bowl, combine the orange zest, orange juice, lime juice, chopped mint, optional honey, and a pinch of salt. Whisk until blended.
  5. Pour the citrus dressing over the mixed fruits and gently stir to coat.
  6. Transfer to a serving bowl or platter, garnishing with extra mint leaves if desired.
