- Preheat your oven to 400°F (200°C).
- Wash and dry the sweet potatoes thoroughly. Lightly rub each potato with olive oil and place on a baking sheet.
- Bake the sweet potatoes for 45-60 minutes until soft and tender.
- Remove from the oven and let cool for about 10 minutes. Slice each potato in half lengthwise.
- Gently scoop out most of the sweet potato flesh into a mixing bowl, leaving a small border along the skin.
- In the bowl, add the softened butter, sour cream, milk, salt, pepper, cinnamon, and nutmeg. Mash until smooth.
- Stir in the shredded cheese and chopped green onions. Optionally, add bacon.
- Spoon the filling back into the potato skins and mound it slightly.
- Bake again for 15-20 minutes until tops are browned.
- Allow to cool slightly for 5-10 minutes before serving.
