  • 4 potatoes Medium sweet potatoes
  • 2 tablespoons Olive oil

  • ¼ cup Unsalted butter softened
  • ¼ cup Sour cream
  • ¼ cup Milk
  • ½ teaspoon Salt
  • ¼ teaspoon Freshly ground black pepper
  • ¼ teaspoon Ground cinnamon
  • teaspoon Ground nutmeg

  • ½ cup Shredded cheddar cheese
  • ¼ cup Chopped green onions
  • ¼ cup Cooked and crumbled bacon optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes thoroughly. Lightly rub each potato with olive oil and place on a baking sheet.
  3. Bake the sweet potatoes for 45-60 minutes until soft and tender.
  4. Remove from the oven and let cool for about 10 minutes. Slice each potato in half lengthwise.
  5. Gently scoop out most of the sweet potato flesh into a mixing bowl, leaving a small border along the skin.
  6. In the bowl, add the softened butter, sour cream, milk, salt, pepper, cinnamon, and nutmeg. Mash until smooth.
  7. Stir in the shredded cheese and chopped green onions. Optionally, add bacon.
  8. Spoon the filling back into the potato skins and mound it slightly.
  9. Bake again for 15-20 minutes until tops are browned.
  10. Allow to cool slightly for 5-10 minutes before serving.
