Step-by-Step Instructions
  1. Heat olive oil in a large soup pot over medium heat. Add Italian sausage and sauté for about 5 minutes until browned.

  3. Add peeled and diced potatoes, followed by chicken broth. Season with salt, pepper, and thyme. Bring mixture to a boil and then reduce heat to simmer.
