- In a large mixing bowl, combine the diced pears and apples with the juice of half a lemon to prevent browning. Toss gently for about 1–2 minutes.
- Introduce the vibrant pomegranate seeds, halved grapes, sliced kiwis, banana slices, chopped walnuts (if using), and dried cranberries to the bowl. Fold gently and mix for another 2–3 minutes.
- In a small bowl, whisk together the orange juice, honey, ground cinnamon, and vanilla extract until well combined and smooth. This should take about 2 minutes.
- Pour the Cinnamon Vanilla Dressing over the fruit mixture, and gently toss everything together for about 2–3 minutes.
- Cover the fruit salad with plastic wrap or transfer to an airtight container, then refrigerate for at least 30 minutes.
- Before serving, give the fruit salad a gentle toss and transfer it to a lovely serving dish.
