Equipment

  • large mixing bowl
  • small bowl

Steps
  1. In a large mixing bowl, combine the diced pears and apples with the juice of half a lemon to prevent browning. Toss gently for about 1–2 minutes.
  2. Introduce the vibrant pomegranate seeds, halved grapes, sliced kiwis, banana slices, chopped walnuts (if using), and dried cranberries to the bowl. Fold gently and mix for another 2–3 minutes.
  3. In a small bowl, whisk together the orange juice, honey, ground cinnamon, and vanilla extract until well combined and smooth. This should take about 2 minutes.
  4. Pour the Cinnamon Vanilla Dressing over the fruit mixture, and gently toss everything together for about 2–3 minutes.
  5. Cover the fruit salad with plastic wrap or transfer to an airtight container, then refrigerate for at least 30 minutes.
  6. Before serving, give the fruit salad a gentle toss and transfer it to a lovely serving dish.
