  • 1 tablespoon lemon zest from a ripe lemon
  • 2 tablespoons fresh lemon juice
  • 2 cups all-purpose flour do not substitute with cake flour
  • ¼ teaspoon salt
  • ¼ teaspoon baking soda

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
  3. Add in the vanilla extract, lemon zest, and lemon juice, mixing until well combined.
  4. In a separate bowl, whisk together flour, salt, and baking soda.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  6. Scoop portions of dough and roll into 1-inch balls, placing them on the prepared baking sheet 2 inches apart.
  7. Gently flatten each dough ball with the bottom of a glass.
  8. Bake for 10-12 minutes until the edges are set and the bottoms are lightly golden.
  9. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
  10. Dust with powdered sugar after completely cooling.
