- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat together the softened butter and powdered sugar until light and fluffy, about 3-4 minutes.
- Add in the vanilla extract, lemon zest, and lemon juice, mixing until well combined.
- In a separate bowl, whisk together flour, salt, and baking soda.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
- Scoop portions of dough and roll into 1-inch balls, placing them on the prepared baking sheet 2 inches apart.
- Gently flatten each dough ball with the bottom of a glass.
- Bake for 10-12 minutes until the edges are set and the bottoms are lightly golden.
- Cool on the baking sheet for about 5 minutes before transferring to a wire rack.
- Dust with powdered sugar after completely cooling.
