Method
 

Preparation
  1. Wash and dice cucumber, tomato, bell pepper, and red onion. Combine in a large mixing bowl.
  2. Add Kalamata olives, feta cheese, parsley, and minced garlic to the bowl. Gently fold in.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to coat evenly.
  5. Cover and refrigerate for 30 minutes to meld flavors.
  6. After chilling, toss again and adjust seasoning before serving.
